    Boil the potatoes

    Place the 750 g of potatoes in a large pot and cover with cold water. Bring to a boil and cook until tender, about 20 minutes. You should be able to easily pierce them with a fork.

    Drain the potatoes and let them cool slightly. Once cool enough to handle, peel them and cut them into bite-sized pieces.

    In a bowl, whisk together the 60 ml of olive oil, 30 ml of vinegar, and finely chopped 100 g of onions. Season with salt and pepper to taste.
