What you’ll need

3 tools across 5 steps.

  • heavy bottomed panEssentialsteps 1, 2, 3, 4, 5
  • mixing bowlEssentialstep 1
  • Slotted spoonstep 1

Method

  1. 1

    Prepare and Fry Vegetables

Toss the cubed eggplant with a pinch of salt and turmeric powder and set aside for 10 minutes. This helps draw out moisture.

Heat the mustard_oil in a heavy-bottomed pan or kadai over medium-high heat until it's lightly smoking. This removes its pungency.

Carefully add the potatoes cubes and fry until they are golden brown on all sides. Remove with a slotted spoon and set aside.

In the same oil, fry the eggplant cubes in batches until they are golden brown. Set them aside separately from the potatoes.

Frying the vegetables separately ensures they hold their shape and develop a beautiful texture in the final curry. Don't overcrowd the pan.

  2. 2

    Temper Spices and Sauté Aromatics

In the remaining oil in the same pan, lower the heat to medium. Add the whole spices: bay_leaf, cinnamon_stick, green_cardamoms, and cloves.

Sauté for about 30 seconds until they become fragrant.

Add the finely chopped onions and cook, stirring frequently, until they turn soft and golden brown. This can take 5-7 minutes.

Properly browning the onions is key to developing the deep, rich flavor base of the 'kalia'. Be patient and don't rush this step.

    Timer: 8 minheavy bottomed pan
  3. 3

    Build the Masala Gravy

Add the ginger_garlic_paste and sauté for another minute until the raw smell disappears.

Now, add the powdered spices: turmeric_powder, red_chili_powder, cumin_powder, and coriander_powder. Stir for 30 seconds.

Pour in the tomatoes puree. Mix well and cook the masala, stirring occasionally, until the oil starts to separate from the mixture. This indicates the masala is well-cooked.

If the spices start to stick to the pan, add a small splash of hot water to prevent them from burning.

    Timer: 7 minheavy bottomed pan
  4. 4

    Simmer the Curry

Reduce the heat to low. Add the whisked plain_yogurt, stirring continuously for a minute to prevent it from curdling.

Once the yogurt is incorporated, add the fried potato cubes, salt, and sugar. Stir to coat the potatoes with the masala.

Pour in hot_water (or enough to reach your desired gravy consistency for 4 servings). Bring the curry to a boil, then reduce the heat, cover the pan, and let it simmer for 10-12 minutes, or until the potatoes are almost tender.

Using hot water helps maintain the cooking temperature and results in a better-textured gravy. Always add yogurt on low heat to avoid splitting.

Simmer potatoes: 10 minheavy bottomed pan
  5. 5

    Finish and Garnish

Gently add the fried eggplant cubes to the gravy. Stir carefully to avoid breaking them.

Sprinkle the garam_masala over the curry. Cover and simmer for another 3-5 minutes, allowing the eggplant to absorb the flavors of the gravy.

Turn off the heat. Garnish with freshly chopped fresh_coriander. Let the curry rest for 5 minutes before serving.

Serving suggestion: Alu Beguner Kalia pairs wonderfully with steamed rice or luchi (Bengali fried bread).

Final simmer: 4 minheavy bottomed pan
