Mix well to coat the chicken evenly. Cover and refrigerate for at least 30 minutes, or up to 2 hours for best flavor.
Soaking basmati rice helps it cook evenly and prevents breakage, resulting in longer, fluffier grains. Marinating the chicken tenderizes it and infuses it with deep flavor.

Sauté Aromatics and Onions
In a large, heavy-bottomed pot or Dutch oven, heat of ghee or cooking oil over medium heat. Add the whole spices: 2 pieces bay leaves, 5 cm cinnamon stick, 4 pieces green cardamom pods, and 5 pieces cloves. Sauté for about 30 seconds until fragrant.
Add the 300 g Onions (thinly sliced) to the pot. Cook, stirring frequently, for 15-20 minutes until the onions turn a deep golden brown. This step is crucial for the flavor and color of the Akhni.
Don't rush browning the onions; they form the flavor base of the dish. A deep golden color indicates caramelized sugars, adding sweetness and depth.

Cook the Chicken Masala
To the browned onions, add the remaining 30 g garlic paste and 30 g ginger paste. Sauté for 1-2 minutes until the raw aroma disappears. Add the chopped 200 g and 3 pieces Green chilies. Cook for 5-7 minutes, mashing the tomatoes occasionally, until they soften and the oil starts to separate from the mixture.
Now, add the marinated chicken to the pot. Stir well to combine with the masala. Cook the chicken on medium-high heat for 10-15 minutes, stirring occasionally, until it's sealed and lightly browned. Reduce heat, cover, and let it simmer for 15-20 minutes, or until the chicken is about 70% cooked and tender.
Ensure the ginger-garlic paste is cooked thoroughly to avoid a raw taste. Cooking the chicken partially before adding rice ensures it's tender and flavorful without overcooking the rice.

Add Vegetables and Layer Rice
Drain the soaked basmati rice completely. To the chicken masala, add the quartered 300 g and diced 150 g Carrots. Stir gently to combine. Cook for 5 minutes.
Carefully spread the drained rice evenly over the chicken and vegetable layer. Do not stir. Gently pour 500 ml Water (or enough to cover the rice by about 1.5 cm) over the rice. Sprinkle the remaining 15 g Salt, 5 g Garam masala, chopped 15 g Fresh mint leaves, and 15 g over the rice. If using, drizzle the saffron-infused milk over the top.
Adding vegetables at this stage ensures they cook through without becoming mushy. Avoid stirring the rice layer to maintain distinct layers and prevent the rice from breaking.

Cover the pot tightly with a lid. You can seal the edges with dough if you have it, or place a heavy object on top of the lid to create a tight seal. Cook on high heat for 5 minutes, then reduce the heat to very low and cook for 20-25 minutes (this is called 'dum' cooking).
After the cooking time, turn off the heat and let the Akhni rest, undisturbed, for another 10-15 minutes. This allows the flavors to meld and the rice to finish steaming perfectly.
