If using fresh tomatoes, you might need to add a splash of water or vegetable broth to achieve the desired sauce consistency.

While the sauce simmers, cook the 4 large eggs. You can fry them in a separate non-stick pan with a tiny bit of oil or cook them sunny-side up directly on top of the simmering sauce (creating wells for each egg).
