Prepare the Fruit
Thoroughly wash the 1 large orange, 1 medium lemon, and 1 medium apple. Slice the orange and lemon into thin rounds or half-moons. Core the apple and dice it into small, bite-sized pieces. You can leave the peels on for extra flavor and color.
For a sweeter sangria, use ripe, juicy fruit. If you prefer a less pulpy drink, you can peel the citrus before slicing.

Place all the prepared fruit into a large pitcher or punch bowl. Add the 50 g granulated sugar and, if using, the 60 ml brandy. Gently stir to combine, allowing the sugar to start dissolving and the fruit to release some of its juices.
Stirring the fruit with sugar and brandy first helps to macerate the fruit, drawing out more flavor before the wine is added.

Pour the entire 750 ml bottle of dry red wine into the pitcher with the fruit mixture. Stir everything together thoroughly. Cover the pitcher and refrigerate for at least 2 hours, or ideally 4-6 hours, to allow the flavors to meld and the fruit to infuse the wine. The longer it chills, the better the flavor.
Chilling is crucial for sangria! It allows the fruit flavors to fully develop and blend with the wine. You can even prepare this step the day before serving.

Just before serving, give the sangria a final stir. Taste and adjust sweetness if desired. Add the 250 ml chilled soda water (or sparkling water) to the pitcher.
