What you’ll need

Method
- 1
Prepare the Meatball Mixture
In a large bowl, combine the 500 g ground meat, 100 g breadcrumbs, 1 large egg, 30 g chopped parsley, minced 2 cloves garlic, 50 g Parmesan cheese (if using), 5 g salt, and 2 g black pepper. Mix well with your hands until all ingredients are evenly distributed.
Don't overmix the meatball mixture, as this can make them tough.
Timer: 10 min
plate - 2
Form the Meatballs
Roll the meat mixture into small meatballs, about 2-3 cm in diameter. Place them on a plate or baking sheet.
Wet your hands slightly to prevent the meat from sticking.
Timer: 5 min
baking sheet (if roasting) - 3
Brown the Meatballs
Heat the 2 tbsp olive oil in a large pan over medium heat. Brown the meatballs in batches, turning occasionally, until they are browned on all sides. This should take about 5-7 minutes per batch.
Browning the meatballs adds flavor to the sauce.
Timer: 10 min
pan (optional, for hot water) - 4
Simmer in Tomato Sauce
Pour the 700 ml tomato sauce over the browned meatballs, ensuring they are mostly covered. Bring to a simmer, then reduce the heat to low. Cover and let it gently simmer for at least 30 minutes, or up to an hour, stirring occasionally. The sauce will thicken and the flavors will deepen.
For a richer sauce, add a tablespoon of tomato paste along with the tomato sauce.
Simmer: 30 min
pan (optional, for hot water) - 5
Serve
Serve the polpette hot, garnished with fresh parsley and extra grated Parmesan cheese (if desired). They are delicious on their own, over pasta, or in a sandwich.
Serve with a side of crusty bread to soak up the delicious sauce.
