- Finely chop the 150 g of onion, 100 g of carrot, and 80 g of celery. The pieces should be very small and uniform in size.

In a large, heavy-bottomed pot or Dutch oven, heat the 30 ml of olive oil over medium heat.
- Add the diced pancetta and cook until it renders its fat and becomes crispy, about 5-7 minutes.
- Add the chopped onion, carrot, and celery (soffritto) to the pot. Sauté until softened and fragrant, about 10 minutes. Do not let it brown.
- Increase the heat to medium-high, add the 300 g of ground beef and 300 g of ground pork. Break up the meat with a spoon and cook until it has browned all over.
