Method

    Cook the pasta

    Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Drain, reserving about 1/2 cup of pasta water.

    Don't overcook the pasta! Al dente means 'to the tooth,' so it should still have a slight bite.

    Prepare the tomato sauce

    While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook until fragrant, about 1 minute. Be careful not to burn the garlic.

    Burnt garlic will make the sauce bitter.

    Add tomatoes and simmer

    Add the chopped fresh tomatoes to the skillet. Season with salt and black pepper. Bring to a simmer and cook for 10-15 minutes, or until the sauce has thickened slightly.
